Made with the green tomatoes that do not ripen at the end of the season, this mustard fruit is extraordinarily fresh, flavorful and chunky.
Casa Forcello makes her exceptional "mostardas" (a traditional condiment from Mantova, Italy that balances sweetness and heat) by sourcing locally harvested fruit, slicing and candying them in their juices, and then adding drops of a very concentrated, spicy mustard extract; it is a highly labor-intensive process.
Recommendations for use: though often paired with cheese (best with soft semi matured cheeses), it also works well with roasted meats and charcuterie.
