Caught during the Cantabric coastal fishing season using traditional methods, Ortiz anchovies are classified by size and their heads removed. They are then placed in salt, pressed, and left to mature in barrels. The length of time they are left to mature in the storeroom is one of the factors which affect the intensity of flavor and texture of the anchovies. These have been matured for at least six months. Once they reach the required maturity, they are hand-filleted and pack in olive oil.
Serving suggestions: never cook them! Serve them with Piquillo peppers drizzled with olive oil, or on top of endives. They are also essential to prepare Cesar sauce.
