Ramon Pena's White Tuna Belly, also known as ventresca de bonito, has a rich and delicate flavor. During the season, they buy the fresh white tuna (Thunnus alalunga) from the day's catch in the Cantabric Sea at the Burela port (Lugo, Spain). The canning process includes: gutting, boiling in brine, cleaning, cutting into logs, filling the cans by hand, and cover them with olive oil

Serving recommendations: serve it just with crackers or a good fresh bread. It's perfect for tapas with Piquillo peppers or asparaguses from Navarra (Spain).
