Ramon Peña selects the best small sardines from the Galician Rias at the port. Then after cleaning (head removal and gutting), the sardines are grilled and toasted at the factory. Ramon Pena Sardines are then peeled and deboned before being canned by hand with olive oil and salt. All that process takes just hours after harvest.
