During processing at the L'Antica Madia, it therefore happens that the times are extended so much so that the production process seems like a natural artistic creation. The precious bronze dies give the pasta its typical rough, faithful consistency ally of the condiments that will be retained and enhanced at their best. Drying, the strong point of every authentic artisan pasta factory takes place at different times depending on the formats, but it never goes below 20 hours. The slow drying, among other things, guarantees excellent stability and uniformity during cooking, will avoid the appearance of the unpleasant "glue" effect, and will give a very high digestibility of the finished product.
