Casa Forcello makes her exceptional "mostardas" (a traditional condiment from Mantova, Italy that balances sweetness and heat) by sourcing locally harvested fruit, slicing and candying them in their juices, and then adding drops of a very concentrated, spicy mustard extract; it is a highly labor-intensive process.
Recommendations for use: the astringency of this apple pairs well with fatty meats such as boiled meats and sausages, as well as tasted with mature cheeses.
