The oranges are candied naturally, like all the fruit used in the Pasticceria Filippi laboratory. The EVOO is produced by an Italian oil mill that uses only artisanal methods. They collect only green olives and extract the oil through cold pressing.
Filippi uses only the best natural ingredients and NO artificial flavoring. For instance:
Natural leaven is the most important ingredient, absolutely irreplaceable, the signature at the bottom of a work of art. Filippi's mother dough is the unique imprint that makes Filippi products authentic. Filippi's mother dough has been kept alive for more than forty years and preserved with care and attention, the way one would care for a living thing, as sourdough is.
Filippi only uses fresh eggs produced by free-range hens.
Extra virgin olive oil, liquid gold, a symbol of Mediterranean countries, right from to the heart of the Iblei Mountains, in South-Eastern Sicily, where the most ancient olive tree planted on the Earth, thrives in its natural habitat. Filippi has chosen a blend of different varieties (Moorish, Biancolilla, Nocellara, Cerasuola, and Tonda Iblea) cultivated near the Mediterranean Sea. Olives are picked by hand, brought to the producer’s crusher, and milled on the same day by cold centrifugation to grant this oil its high-quality features.
Filippi uses an optimal natural sweetener, honey, dosing it with a lower amount of sugar. Filippi's honey comes from bees that are treated ecologically and fly on the hillsides of the Po Valley, in the Regional Park of the Euganean Hills, Padova.
Vanilla is a particularly important ingredient for them: it is the fundamental natural flavor that rounds off and completes the taste of their products. The final touch that only a flower can give! Filippi's Planifolia Bourbon vanilla powder comes from organic and certified fair trade cultivations in Madagascar.

Lemon peel from Sicilian lemons, orange peel from Washington oranges from Calabria, peaches, sour Amarena cherries, round apricots... and, of course, Australian raisins with an amber color and made from grapes with a very thin peel, which their melting point and ability to stay intact in the dough.
