The basic ingredients of the Top Line, including eggs from safe farms, milk butter, and cream produced in the mountains of Italy, are all fresh. The rest of the ingredients are selected from the best that Italy has to offer: superfine flour, top-grade Italian sugar, artisanal sea salt from Cervia
Frutta e Fiori Collection. Inspired by botanical tables from the late 1700s., Frutta e Fiori Collection is the result of extensive research that Sonia Design conducted at national and international libraries. Sonia Pilla found inspiration in fruits, leaves, and flowers drawn by hand by skilled artists with expertise in botany. She then laid her own designs out on a natural background. The pink ivory color of the wrapping paper was specifically created for this very Collection.
The Frutta e Fiori Collection comprises all the Loison Panettone varieties featuring either a fruit or a flower as the main ingredient. This line is the result of decades of an ongoing search for premium Italian ingredients, which give our Panettone its exclusive character. Whilst keeping an eye on tradition, Dario Loison embraced a new challenge in baking and managed to introduce innovation, while preserving the integrity of traditional sweet bread.
Panettone Rosa is made with a blend of different roses, including the Damask Rose. Cultivated since the time of the Persians, this variety is renowned for its intoxicating and delicate scent. Every year, in the Rose Valley of Bulgaria – a region protected by mountains – beautiful roses in full bloom are harvested by hand from May to June. The roses are picked in the early morning, so to preserve all their floral nuances. With over 400 aromatic substances, the Damask Rose is aptly called the Queen of Roses. To make this Panettone, the Damask Rose is combined with a carefully calibrated syrup infused with Ligurian Roses (a Slow Food Presidium). The recipe for the rose syrup is based on an old and celebrated tradition that dates back to the 1600s. According to the Presidium, the syrup is made using the petals of roses grown with sustainable cultivation methods, far from any source of pollution.
Vanilla is one of the most prized spices. Loison sources theirs directly from growers in Madagascar, as they offer one of the best vanilla crops in the world. The fragrant black pods we are more familiar with are obtained after a lengthy production process.
Sultana raisins from Turkey, featuring seedless, even-looking fruits, are sweet and plump. The grapes are dried naturally out in the sun with no added preservatives.
