The Veneziana Pistachio is the sweet focaccia typical of the Venetian tradition, a symbol of history, of cultural influences from distant lands and of Italian creativity.
Dario Loison created his Veneziana, merging the uniqueness of the Venetian tradition with the research and selection of unique and precious ingredients. La Veneziana has a soft and well-bubbled dough thanks to the use of our mother yeast and 72 hours of patient craftsmanship. The dough is then enriched with natural Mananara Vanilla from Madagascar and a delicious Bronte Green Pistachio cream, two prized Slow Food presidia, and embellished with a blend of 4 selected spices, which gives the Venetian an unmistakable aroma and taste. The surface is finally covered with a delicate glaze and garnished with a fragrant pistachio grain.
Veneziana al Pistacchio is a cake made by means of the natural fermentation of sourdough, with an irregular oval shape, reminiscent of a dove. The cake itself is especially soft owing to the use of fresh milk, butter, and cream. It is light in texture and enriched with natural Mananara vanilla from Madagascar, filled with cream of Pistacchio Verde di Bronte PDO. The surface is covered with pistachio icing, decorated with "Pistacchio Verde di Bronte PDO" and grains of sugar.
Pistacchio Verde di Bronte PDO. This pistachio variety grows only in the hilly land around Bronte, Catania, and only here does it acquire a bright emerald-green color and an intense, resinous fragrance. Pistachio nuts are harvested in September and are used in the making of many confections, such as brittles, nougats, cakes, and pastries.
Vanilla is one of the most prized spices. Loison sources theirs directly from growers in Madagascar, as they offer one of the best vanilla crops in the world. The fragrant black pods we are more familiar with are obtained after a lengthy production process.
