Sour cherries are an ancient variety of wild cherries that are typical of the Tuscia area. In their organic farm, Il Molino safeguard biodiversity by cultivating these heritage varieties to make a fantastic jam that is not over-sweet but packed with flavor, thanks to the tartness of the fruit. After harvesting by hand, the cherries go straight to the farm workshop, where they are stoned and cooked with sugar. A simple recipe handed down in the family for generations, and it captures all the flavor and fragrance of the ripe fruit to perfection.

Le visciole sono un’antica varietà di ciliegie selvatiche tipiche della Tuscia. Nella azienda agricola biologica difendono la biodiversità continuando a coltivare queste antiche varietà e trasformando i suoi frutti in una fantastica confettura, non particolarmente dolce, grazie all’acidità della visciola. Dopo la raccolta a mano, le visciole sono subito lavorate nel laboratorio aziendale: sono denocciolate e cotte con lo zucchero, secondo la semplice ricetta tramandata nella casa da generazioni, che è capace di catturare il sapore e il profumo della frutta matura.
