Carte Noire is a low-acidity oil obtained from a selection of the best Taggiasca olives. On the nose, it is fresh, with hints of grass and artichoke and fruity green apple and olive. In the mouth, it is pleasantly pasty. The aftertaste reveals light notes of dried fruit. Its delicate nature makes it perfect for seasoning raw food. The Carte Noire is produced in limited series between 15,000 and 20,000 bottles.
The origins: the Benedictine monks built the first terracing on the hills, they settled between the late seventh and early eighth centuries in the valley of Argentina.
The plant: the particularly large and robust plant can reach fifteen meters in height and produce fruit for more than 600 years.
The fruit: elliptical-cylindrical and slightly larger at the base, has a very high oil content.
Production: from one hectare of olive groves, seventy quintals of Taggiasca olives are usually obtained, compared to sixty / one hundred quintals produced from olive trees of other varieties.
