Pons is a superior quality vinegar that comes from the home of the best sherry: Jerez, Spain, one of the oldest Spanish wine producing areas.
From the same Palomino grapes, its fermented juice is soured and aged using the traditional method of "soleras & criaderas", a blending process which gives the vinegar its style and consistency. The traditional method takes its name from the barrels closest to the floor from which the final blend is taken.
Pons Sherry Vinegar is aged for 50 years in American white oak wooden barrels, steered to the southeast to provide exposure to the sea breeze which is necessary for oxygenation, and its acidity is 8%.
Among the outstanding attributes which make this product unique and for which there is no substitute in the gastronomy world are the amber color acquired during the 50-year aging process, its delicate and fine aroma, and its excellent taste.
