Honey
Asphodel honey is distinguished by its light, almost transparent color, which tends to white with pearly highlights when it crystallizes.
On the nose, it releases a delicate aroma of almond blossom and citrus, with a hint of lychee; on the palate, it is extremely sweet, smooth, and refreshing, with hints of cotton candy and vanilla. The finish, sweet yet slightly tart and persistent, recalls almond milk, candied quince, and ripe pear.
The result is a rare and precious honey, enchanting with the delicacy of its aromas.

Accompaniments
Asphodel honey is ideal in slightly warm almond milk and poured over homemade profiteroles. It can also be used in place of sugar when making blancmange.

Plant variety (see drawing)
Asphodel is a plant that prefers calcareous, arid soil, especially widespread in Sardinia. It can reach 70-110 cm in height and blooms from March onwards, with white to yellow corollas resembling lilies. Its name derives from the Greek a ("not"), spodos ("ash"), and eros ("valley"), meaning "valley of what has not been reduced to ashes," indicating the asphodel's ability to survive the passage of fire.

These are possible nectars (belonging to other botanical species) present in honey in small percentages.

Mieli Thun is pure monofloral honey collected during peak blooming periods in specially selected, uncontaminated locations. Nomadic honey, produced by taking the bees to sixty extraordinary sites, a family tradition involving trips all over the country, careful observation, and paying heed to the tales of the farmers, who are true connoisseurs of the land.
