Salfiore di Romagna, also known as the Sale dei Papi. It is the same Sweet Salt of Cervia, but sieved, to make the grain medium-fine. The Salt of the Popes is recognizable by the grain, which is finer than that of the Cervia Salt and by the burgundy red color of the packages, which simultaneously recall the color of the salt basins and flamingos. Even the Salt of the Popes maintains the characteristics of the Cervia Salt, its sweetness and the richness of trace elements, being simply collected, left to dry in the sun and washed with mother water. The only difference is sieving, which allows, in this case, to divide the larger salt crystals from the medium and fine ones.

The Salt of Cervia is an integral marine salt, harvested according to the traditional method, naturally dry and washed with high-concentrated parent water, without additives. It retains all the osmotic properties of the salt and the trace elements present in the sea water.

Dried in a completely natural process, it maintains 2% humidity and a high concentration of elements like zinc, copper, iron, and magnesium. This same natural process means that other less soluble elements such as sulfates, potassium, and magnesium chloride are not present, so you do not get that bitter aftertaste left in your mouth. It is sweeter than other sea salts.

Salt production in Cervia, a small town in Emilia-Romagna (Italy) on the Adriatic Coast, dates back more than 2000 years.
