Among Spain's most treasured cured meats, Lomo is carefully dried for 2 months, seasoned with smoked paprika, garlic, and spices. This Lomo is simply a whole pork loin, solid meat with no fillers from purebred Ibérico pigs, fed with acorns in the pasture without the addition of fodder.
