Jamón 100% Ibérico de bellota is the highest grade of jamón ibérico. Hams from purebred Ibérico pigs fed with acorns in the pasture without the addition of fodder. It is the only ham that can legally be called “Pata Negra” ("Black Hoof"). The production of these hams is very limited.

From the land of Cordoba (Spain) comes this exceptional Ibérico de Bellota ham "Los Pedroches" Denomination of Origin. The animals are truly free-range, foraging below the cork trees and holm oaks in family groups. The dehesa is a beautiful harmony: holm oak and cork trees, grasses from the pastures, aromatic plants, and acorns. It is also an especially important reserve for aromatic plants such as thyme or rosemary and a wide variety of mushrooms. This exceptional habitat that provides a natural and balanced diet to the Ibérico pig, key to achieving the sensory quality of Jamón Ibérico.

What makes Jamón Ibérico de Bellota the finest ham in the world? It is a combination of the noble Ibérico breed, a unique ecosystem that provides the ideal diet of grasses and acorns, a free-range lifestyle and a tradition of curing meats that goes back millennia. Each ham is cured for over 4 years. The hams from this region have a reputation for being sweeter than other Ibérico hams. 

Ibérico Jam is healthier and with less saturated fat than any other cured meat out there. Actually, some doctors in Spain recommend acorn-fed Ibérico Ham as part of the diet to lose weight. Scientific studies have shown that the fat of acorn-fed Ibérico ham contains over 50% oleic acid, which is responsible for reducing bad cholesterol and boost well in our body. It also provides calcium, protein, iron, phosphorus, sodium, potassium, and vitamins B1, B6 and B12.

Recommendations for use: In Spain, we have it on its own (serve the slices on a warm plate), or just accompanied with the juice of a ripe tomato spread on a piece of bread. Try it with a red wine glass to best experience this delight!
